coffee help

I need some help to up my coffee game. I am the only one in my family who drinks it, so I have been using a Kuerig for convenience. Before I purchase anything I decided to test out with equipment I have on hand.
- bought some medium roast whole beans
- blade grinder
- old Mr Coffee drip coffee maker
I did a course grind of about 3 tbsp of beans with water up the "4 cups" line on the pot - which is a little more than one cup of coffee. Brewed it on the regular setting and it was tasteless.
I tried again with the same quantity of everything but ground the beans much finer and brewed it on the strong setting - still completely tasteless.
So what am I doing wrong? Do I really need that much more beans? It seemed like plenty for one cup.
And second - what setup do I need to make a few good cups of coffee for one person in the morning?

I would keep adding a tbsp of beans till you find the taste you like and check to make sure the beans you have are still good.

no covid lol. And the beans are brand new - it just seemed visually like it was plenty of beans for one cup.

Buy small batch or local roasted beans. Light roasted beans are better for flavor extraction. Quality beans go a longer way .

Get a conical burr grinder if you decide to upgrade.

Get a good drip coffee machine that adequately make drip coffee without burning the beans. The only beans you should put in a Mr. Coffee is Folgers because it will taste the same no matter what. Should you decide to go the espresso route, you can make an Americano which is espresso shot and hot water and has some similarities to regular drip coffee.

Agree with the grinder suggestion.
For 8 cups in the pot, I have a pretty good pile of coffee grinds in the basket before it starts. I'm at the point where I eyeball the mound and just power in the grinds till a good pyramid forms.
I also double filter to slow the drip down and let more flavor get into the water.

Ruta Maya: I get it at Costco (Dark Roast)
Black Rifle Coffee (Suppressor Smooth): This had a good flavor to it. I'm usually a dark roast guy but this was really good.
Seattle's Best: I usually buy this ground because they grind it very fine.

CDM Coffee & Chickory is all I drink at the house and it makes a damn fine, strong cup of coffee.
I've found plain coffee, no matter how ground or fresh has little to no body in the final product. Plain coffee so weak you can see the bottom of the cup when filled---basically what I consider piss water.

Consider doing cold brew. You can make a weeks worth at a time and it takes no special equipment other than your grinder and some cheese cloth.

You didn’t use enough coffee. Recommend 1 T/“cup” (MrCoffee measures “cups” as 5 oz. Also a finer grind will yield more (not necessarily better) flavor. With your current equipment get more flavor by using more coffee or finer grind or both.
As a side note, ditch that pot as soon as you are able. MrCoffee type brewers tend t make a weaker brew and an old one may really struggle. Your water might not be getting hot enough to extract flavor.

What are you basing your taste off of? Do you like the like coffee at Starbucks or some local joint? If local joint are you doing pour over?

French press and moka pot are great for a strong brew for one. More efficient than the drip, so you can brew stronger coffee with fewer beans.

I like a fairly strong cup. I have only used the pre-ground coffee before. And I usually did a 1:2 ratio. Meaning if I filled the pot up to 10 cups, I would put 5 heaping spoons of coffee. So I assumed I had plenty of coffee (3 spoons of beans for 4 cup line on the pot.

Burr type grinder like someone mentioned, locally roasted beans, filtered water, small scale good brew pot or French press etc.
I just recently upgraded my drip maker to a Breville Precision brewer.You can add an attachment to it for pour over. For eight cups I use 65 grams of coffee. Comes out great!

I think you can make what you like by just buying an aeropress or French press. Maybe get a $30 scale. The blade grinder is fine, it’s not as good as a burr but you won’t notice the difference probably.

Being able to control grain size is everything. IDK how accurately our grinder measures out quantity, but it seems consistent at least. Need to get a scale and check it though.

I've been using an Aeropress for nearly a decade. Similar to a French press, but more durable since it isn't glass. It's great for camping as well.
I also have a cold brew coffee filter that I bought off Amazon that is extremely easy to use. All you need is a quart size Mason jar and the filter. Cold brewed coffee is great and if you prefer it hot, you can just heat it in the microwave.

Drip coffee is utterly mediocre, but that's a conversation for a different day.
If you want better coffee, buy better beans. Like has been mentioned, fresh, local beans are ideal.
If you want stronger coffee, use more coffee. People conflate "strength" and "extraction" in extremely counterproductive ways.
