In these parts we cook chicken Andouille gumbo with okra and tomatoes. We (and all the relatives and guests) really like it.

I like okra, so it goes in every gumbo I make. I know some who dislike it and never use it.

No one has been arrested for a gumbo crime. There is no okra rule.

Volumes could be written on the value of these four: chicken, Andouille or smoked pork sausage, okra and tomato. The combination of flavors feeds the soul.

Story on okra: The Historic New Orleans Collection had a New Orleans food history installation narrated by Leah Chase. She said that Africans sewed okra seeds into their clothing so that if they were captured, they would have it, wherever they were going.
Fastforward to 2005, I met an old black guy outside Rose Nicaud in the Marigny, right after Katrina..literally days after the storm. He was sitting outside with an intricately carved walking stick and looked interesting and we started talking. He told me his grandmother was a slave and she told him to always plant okra in his flower beds because it's sacred, so he always did. He then told me that when the levee broke in the 9th ward, the flood water stopped at his okra and flower beds.

Grew up in laforuche parish, we only put okra in a seafood gumbo.

I'm as Cajun as they come, but the prairie kind, not the bayou kind. So, my feet aren't webbed and it explains why I prefer chicken and sausage gumbo to seafood. Also, I hate okra and wish to see it destroyed in all of its evil forms.

I've never even been in LA...I put sausage, chicken, crawfish, shrimp, & okra all in the same pot.

Keep the okra out of my gumbo please, but do fry it and serve it on the side. One of the best bites IMO is chicken and andouille with a piece of fried okra.

A friend of mine makes one like that occasionally. C/S and seafood combined. No okra or tomatoes. He calls it a "wild dog" gumbo. He's from Waggaman. It's pretty good if you don't mind not tasting the seafood very much. Lol.

Me?.....uhhh, no thanks. Keep 'em separate, no tomatoes, and okra with shrimp only. And potato salad on the side...not IN the bowl.
