I wasn't much of a fan of the brisket sandwich either, I do love the club, it is quite good!

I worked at a BBQ place in my teens. We would always trim the brisket by seperating the lifter from the base. We would then cut the fat and set meat with pieces of fat attached to a steam basket on the side. That meat and fat rendered down and became very tender and was generally used for chopped brisket.
Then we would cut across the grain of the meat. We also never held the brisket with our left hand, we used a cutting fork. We also did not "saw" the brisket, we quickly sliced in one quick motion making a pile of slices in seconds...I see so many people these days handling brisket without a clue and it seems to be what happened here once again.
Lifter meat was generally used for sandwiches or whatever if the customer requested. The base or flat was generally used for Brisket plate dinners. We did not trim all the fat from the brisket, just the major fat chunks off of it. What was set to the side into the warmer was usually the very random grained meat of the lifter (point) which majority was laced with fat. Delicious stuff but can get out of hand with fat content in some spots.
I used to handle 12+ briskets a day at this job. Can get through one with my eyes closed without using my hand to navigate it. Boss man did not allow that as it was poor presentation while customers wait in line to eat watching their plate get cut.

Yeah, I don't get this place at all. I'll give it to them though, they pack them in and sell a lot of overpriced stuff. The one in Lafayette will stay busy, but the smart people should just stop at exit 97 and get some real goods at any of the boudin shops. The Bucees boys will be along to flame away shortly.

Buccee's is satisfactory for on the road food. I prefer their sliced sausage sammiches. Chicken tacos are pretty darn good, and beef jerky is nice with different flavors.
All that said, like others have replied, if you're comparing to Louisiana gas station food like the Chevron on 190 just East of Elton, a Danny & Clydes are various gas stations in St. Landry Parish, you're going to be underwhelmed.

Let me rephrase. I’m not getting gas station bbq from a large chain. Some local gas stations do have some really good food in the south. But you won’t find it at buccees.
But don’t worry, I eat just fine.

There is nothing redeeming inside Buccee’s. The food is, like you said, horrible. You are better off stopping at a McDonald’s. Circle K’s new hot food delis at select locations shames Buccee’s. Wawa, likewise, shines in the darkness of Buccee’s. Gas station chains have far surpassed anything Buccee’s serves. The non-food items are made in China junk. Please refer to LINK
