Best cheese for broccoli and cheese?

In your opinion? I'm gonna make a pot of broccoli and cheese tonight and throw some rice and smoked sausage in with it.

I don't want to start a new thread, but I'm a sucker for a good broccoli and cheese soup. When you think about it, it's just a REALLY runny cheese sauce and there's more of it, so it's not PRECISELY a thread hijack.
Anyway, where I'm going with this is wondering if any of you have a really good recipe for broccoli with a really abundant and diluted cheese sauce.

I do "smashed" broccoli because I limit carbs. Steam the broccoli. Smash. Add real butter and salt. It is so good.

I put queso on roasted broccoli one time and it was amazing. I need to do that more often.

Not the same concept, but I like to sprinkle feta cheese over my steamed broccoli- just enough saltiness and acidity that it doesn't need anything else.
