Friend,

A delightful tour of what was obviously some amount of work to prepare. I particularly like the presentation for the Arancini and the angel hair pasta dish. I hope no real champagne was used in the second dish. I do very much enjoy caviar.

Ha! No restaurant. I do this about three times a year. I cook and everyone has to bring really nice wines. Usually for about ten people each time.

Nice 7 course meal! Did you bake/ broil the oyster with zabaglione in the shell before adding the caviar?

The oysters had a. mushroom duxelles on them, then the champagne zabaglione. That was all baked, then the caviar was added when they came out of the oven.

Black garlic pesto recipe

10 Black Garlic cloves peeled & quartered
12 tsp basil leaves, chopped finely
7 tsp mint leaves, chopped finely
1 raw garlic clove, minced
10 tsp pine nuts, toasted in a dry pan over a low heat until golden brown (mix them often)
2 tablespoons (about ½ lemon) lemon juice
5 tsp finely grated Pecorino Romano cheese
½ teaspoon salt
¼ teaspoon black pepper, freshly ground, plus more to serve
1/2 cup extra virgin olive oil
I ran it all in a blender until it was smooth
As soon as my pasta was cooked, I drained it well, then tossed it in the pesto while it was still hot and served it right away with some fresh cracked pepper and a sprinkling of cheese.
