but have seen alot of recommendations to include eating organs for nutrients and I don't think I can do it
heart is often the best part of the animal

Liver's delicious, baw.
I love chicken lizards, gizzards, hearts. Calf/cow liver is great. Haven't had heart, i don't think.

Maybe try something like Carnivore Crisps? The liver ones are not bad.

Why?
Just seems like I would get tired of it, if it’s all I ever ate. I love a great steak, don’t get me wrong, but every day of the week I think i would get burnt out.

Sounds like a great way to get constipated.

Chicken, Turkey, Fish, Cheese, Eggs, Steak, ground meat, organ meats. You're just cutting out are vegs, fruits and grains. Still a lot of variety.

Not at all.

I’ve started this a couple times but can’t get passed the extreme blow up of my bowels.

Leafy greens are low in calories and provide important nutrients. You should really try to include them.
That’s a big feature of the program. Their contention is that the nutrients in veggies are so minuscule, they do not provide a net positive over the “anti nutrients” in them. Essentially, the benefits of antioxidants are overblown and in many cases detrimental. Really the only vitamin lacking in the CV is vit C, and you don’t need it if you’re not consuming carbs. I’m not saying it’s right or wrong, but adding veggies to the diet is not Carnivore, as it is defined.

Paul Saladino was on the Joe Rogen podcast about 1-2 weeks ago. If you're interested in this diet then that's where I would start.

Do you get a enough potassium and magnesium on carnivore?

When do I stop peeing out of my butt? Good Lord man.

Downsides are you lack a lot of micronutrients which can lead to vitamin deficiency if you don't rotate meat sources and don't take vitamins.
Still waiting to verify this to be true as it relates to beef.
Paul Saladino is a great face but he goes overboard on the micronutrient and the needing to eat organs to maintain optimum health (he owns a supplement so be on the lookout). There are a lot of "old timers" out there that do not eat organs and don't find them appetizing and are totally fine only eating beef. I say that to say this - the heart is a damn fine piece of meat that should absolutely be tried a multiple of ways before writing off completely. I'll collect 4-5 venison hearts a year because guys just don't want them.

I honestly don't think its enough of a deficiency to really have an affect, but long haul like a year or more and I am sure it would.
Also keep in mind(I know its a casual observation only) that Eskimos tend to have issues with overall life expectancy. Yes I know they have lower rates of heart disease. But overall life expectancy is 15 years less than Canada as a whole.
Here is a good episode on JRE about the diet with Layne Norton retorts to each claim.
LINK
Again, people should eat like they want that allows them to stay consistent in their approach to whatever goals they have. That is way way more important than any one type of diet.

Heart is pretty much the only organ I can stand. I love duck/goose heart in a pot roast.

Might be just a bit biased. Rogan doesn’t challenge his guests on anything

Of course it is less, they lead primitive (to western standards) lifestyles with terrible sanitation habits. There is far more that is killing them off earlier than diet, of which, most haven't followed traditional diets in the last ~110 years. The early studies on the tribes were after western diets drifted into them. The more primitive tribes (those with less western interactions) had decent (for a lack of a better term) "diet health" as their overall health was fairly terrible. Their teeth sucked due to sand in the food, eyes swollen due to high winds and grit getting in there, sanitation (mentioned earlier), and medical attention was poor.
Layne just can't stand to not be noticed. Love him, but he can be stubbornly wrong too. His twitter gets hilarious when people troll him and he takes the bait.

Carnivore Diet: Why would it work? What about Nutrients and Fiber?
This video is a break down of what I thought to be common concerns when it comes to the carnivore diet, recently popularized by Jordan Peterson & His daughter Mikhaila Peterson. Some might call it "extreme" or "dangerous" or "a really bad idea," but is it? Many people are having several health conditions healed by eating this diet, some are having improvements despite having been doing a paleo diet or keto diet.
People are having relief from arthritis, psoriasis, and various inflammatory conditions, and yes they are experiencing weight loss too.
But what about nutrients? Isn't a lack of vitamin C going to give them all scurvy? What about constipation due to no fiber? And why would cutting out plants heal people? This is what the video addresses.
