I would definitely do the wine pairing. You’ll get to try many different styles of wine that you normally would not get in the store. Also, the pairing totally elevates the meal. In January, we dined at Per Se, Keller’s NY restaurant, and it was outstanding. His “Oysters and Pearls” dish is amazing.

I would lean towards the pairing, but I don't think it's absolutely necessary.
We decided against it when we went to Osteria Francescana, got a bottle that is our style for about $150, and it was outstanding. I'm actually glad we didn't do the pairing, although I'm sure that would have also been amazing.
The only downside to doing the pairing (IMO) is that I often find I'm still enjoying the glass from Dish A, then Dish B and Glass B come out and I'm in a constant state of catchup. But that's literally a champagne problem.

are you in to wine? Their wine list is pretty overwhelming. If you’re letting the Somm steer you you may as well let them pair it for you. Price goes out the window when eating at a place like that

Oh man. The French Laundry is 100% a must-do here in the next couple of years for us. Very jealous, OP.
I obviously have never been, but I'd definitely go for the wine pairing. But I love people picking out stuff for me - be it listening to the radio vs. my own selected music or eating a blind tasting or whatever.
You know whatever they select to pair with each course is going to be done so damn well.. Select your wines at every other meal of the trip ;)

Pairing. It's a world class restaurant. Let the professionals tell you what is best.

Let me break the trend here. When we went I took the money we would spend for everyone to do the pairing (or whatever your group wants to spend) and told the sommelier “here is what we want to spend on wine. This list is insane. But you have our budget. Take it away”.
It was awesome. Rather than have a different glass of wine per course (which can get tedious and doesn’t allow you to see how a wine develops) we had 2 bottles and 2 other glasses. It was great. Do this.
ETA: actually I think I gave them a budget of $600 for 4 people. We went for lunch. It was wonderful experience.

To me OP it comes down to whether or not you like different wines and are open to anything. I do, so I’d absolutely go with the pairing. It will be great. There may be a pairing you don’t expect that will blow your mind.
Some people only like certain wines so they would much rather get a bottle of something great they enjoy. I get that to.
