Allen Edmonds has a sale right now. They’ll last you 5 times as long as mall brands like J&M.
26kW is a hell of a lot of juice to ask of a lawnmower engine.

Kohler between the two for sure. Cummins is what I would choose in air cooled. Much quieter.
Tin-lined copper, carbon steel, cast iron. All behave quite differently but all will be relatively non-stick without the chemical garbage.

If you're converting to gas soon and doing a kitchen renovation anyway, I'd highly recommend installing a 36" unit if you have a 30" stove.

At least 3" on each side of the stovetop is recommended, I sure wish my cabinetry allowed it, speaking as someone with a 30" 600 CFM quality ducted vent over a 30" gas stove.

with the same width, you're never going to capture all the heat, moisture, and smoke that a vent wider than the stove will.
The James 710 would be a fantastic first date spot. Mazen's is a good restaurant but I would choose something a bit more relaxed for a first date.
Full service prices on Marathon’s website seem reasonable.

The cost/benefit on servicing mechanical watches costing under $1k new is always a balancing act.

It's worth the $10 add on if you are already checking out the museum. I don't know that I would go just for it.

Liquid cooled unit or a Generac air-cooled shitbox?

Will depend on gas line needed, whether gas & electric supply is on the same side of your house, etc.
Big Papi have really good advice above. Couldn’t be happier with my demeyere - I have pieces from both the Atlantis and industry 5 line.

I have a good amount of all-clad and it’s pretty good stuff but I prefer the demeyere by quite a bit.

I’m also a huge fan of Fissler Original Profi and Paderno Grand Gourmet.
Demeyere has a lot more aluminum than both.
C&C. Fantastic service and price match guarantee.

Do you cook on gas, induction, or electric? Do you intend to keep the same heat source for the foreseeable future?
36” blackstone, 10.5 & 12” stargazer cast iron pans, 32 cm hammered copper rondeau from E. Dehillerin, and an 11” Demeyere Atlantis pan.

Santa loaded me up.

Decent knife skills. Better than some, not as good as others. Enjoy the hell out of the knives, though.

RT by a mile. When you do a deep dive into specs, a comparable Traeger will cost a lot more.
Got the 7 qt oval. I don’t use cast iron on the stovetop much but the ovals are perfect for chuck roasts in the oven.
