Also, here's a rule: eat whatever the hell you want

Carry your Nutria through the changes of scalding water before adding to gumbo?

I know I inspire a lot of negative responses because I'm an a-hole, but damn that dude grinds my gears.

But in all seriousness, that is the way we do it in Cajun country so it can't be a "rule."
Cajuns know how to cook, so adding seasoning after its boiled is longer Cajun.

Only pick sassafras leaves on a full moon in August to make file

Budget 3lbs of crawfish per person if not cajun. Budget 8lbs for cajuns...but include children and infants in your estimate.

okra in gumbo
If gumbo doesn't have okra or filet...it's a stew, not a gumbo.

Don't use prechopped veggies.

Only use a quality smoked sausage from an independent butcher not mass produced grocery store brands.

The food is better South of I-10. (Have you nOteeeced?)
Sous vide anything is blasphemy.
Cooking rice in a rice cooker is blasphemy.
If going out to eat anywhere other than fast food, wear your good jeans, but remember to iron them first.

From an LA native who sees too many failed Louisiana food attempts in the DC area:
-Old Bay isn't fit for consumption, and is code for oversalted
-Remoulade > tartar
-Tabasco is the Dixie beer of LA hot sauces
-Cajun and creole aren't interchangeable terms

Do people really do that? Slice and brown first. Then drain before adding to gumbo
I don't even drain. I leave the sausage fat and chicken thigh fat in there for my roux

You don't read the food board much, apparently.
