Out of all the jambalaya I have eaten, there really isn't much flavor wise distinguishing any of them.

True, but some of those guys turn out some amazing jambalaya. However there is a definite genus of baaaad, jambalaya, the 'benefit' jambalaya. It is for the benefit of a church, school, club, civic org or car crash victim, it consists of 1 pound of cheap sauage, one bag of onions and 50 lbs of greasy rice. Typically served in a styrofoam clamshell with a plastic fork. I usually just say here's the $5, keep the rice.

I like this thread.
Churches have a sweet spot when it comes to pot lucks.
Small enough and tight-nit enough and you get awesome home cooked food.. Everyone knows who brought what and there's some pride.
Then the church grows. Now the cooks also teach a Sunday school class, have kids, and know there will be a lot of people there. Quality declines slightly because of time restraints and straight demand, but it is still good food. There is some anonymity for people who take short cuts.
Then the church grows more but not large enough to have cash flow to cater the damn thing. This is where most of the food in this thread applies. It's bad, but it gets people fed because you know, we ain't Jesus and all. No one knows who brought what and you only know half the people there anyway.
Then you have the mega church. They have pot luck at three different times to fit everyone and cater everything but dessert because everyone can bake boxed brownies.

People get used to the abundance of really good food down here and don't appreciate it until they don't have it for a while. Some people are just picky. Whatever though, jambalaya kicks arse

Man I'm glad other people agree. I was always vastly underwhelmed by jambalaya but always kept my mouth shut. Now corn and crab bisque.. I thought everyone liked that!

It's not a picky thing. It's just not that great of a dish to me
Rice is very meh to me.
I don't hate jambalaya or anything. I just don't love it. And I think I get really sick of it being the go-to crowd feeder.
