Ok that makes sense. That was a big question I had. I was seeing they estimated fertility up to 6 days and I guess there‘s a gray area where people still have sex before that amount of time.

Both Man and Woman are made in the image of God. To be so different and both be an image means that neither man nor woman individually is a full reflection.
If both only present an incomplete reflection; then only when they join together can a more full image of who God is be seen.
Therefore the closest we have on earth to the full image of God is what is reflected in the joining of a Man and a Woman through the Sacrament of Marriage.
Sex is a physical expression of love between a Man and a Woman and should be saved for marriage because so powerful is just this reflected image of God that through the joining of a man and a woman - God has chosen to share His power to create life.
Putting all of this together:
The earliest foundations of Judeo-Christian morality is built upon the idea that men and women must join together to reflect God's love. So powerful is this idea; the most godly power known to man (to create life) is reserved for this particular foundation.
God chose that the world would only get to see a more complete reflection of who is through the love shared between a man and a woman. So powerful is that love - He gives us the power to create life. He then gave us His church to protect the gifts He gave us. So to me, it makes perfect sense why the Catholic Church is so caught up on Sex. Sex is what our entire existence is predicated upon. Existence in both the physical and spiritual realms.

One of the best things me.and my now wife did prior to our marriage was going through NFP and Pre-Cana

Yes.
Have used the Symptothermal method for years (which essentially has mucus-only method also built in to it). Wife struggled with remembering to take temp each morning, eventually started using a Tempdrop. The battery life was terrible after about a year, and we would lose data every few cycles.
Swapped over to Marquette method. Much easier for her to remember to pee on a stick each morning than log a temp.
2 little ones in 6 years. Both intentional. Understanding the methods can be quite difficult. I find Marquette to be easier to understand with far less “grey” area than some of the others. They all “require” a class to be used, and they’re usually $100-200 sadly, but they’re generally pretty effective if understood and followed.
Oddly, it’s one of the few places in life where people who opt for synthetic hormone treatments ridicule those who take the “natural” approach despite pretty decent evidence for both camps.

My sister in law used it. She has 5 kids. Not every woman has a regular cycle

We did NFP. Wife had to track her temperature daily like clockwork. It worked. Then we used it to get pregnant when we were ready, and first cycle we got pregnant.
