Yea, unless you signed some legal documentation, you are going to have to do 1 of 2 things you don't seem to want to do. Move where your kid is, and or, battle this out in the court system

Sounds like you're struggling, but you need to do what's best for you and your son. An absent father isn't best for your son. Also, you lucked out by not marrying this manipulative dumbass.

Does that 100% custody include her ability to move to another country for permanent residence?
I'm unfamiliar with how that works, but that seems like something that would be easily fought in court with a lawyer if you changed your mind.

This is probably true for most divorces with kids. You don’t get divorced because you’re best friends with warm fuzzy feelings.
If you don’t fight for more now, you’re going to be irrelevant & your son is left with her narrative on why dad didn’t want him. That sounds like a great recipe for you to become an alcoholic with a lot of life regrets. Fight for your child.

You never give up on your kid. See him as much as you can. Move to the country if you can. Get lawyers and get custody so the kid can come stay with you for the summer. Do whatever the hell you need to do to see your kid.
If it works out that it's just once a year, oh well. Never stop.
Never force anything on the kid. If he doesn't want to hug or whatever, so be it. You're his dad and you're there NO MATTER WHAT.
The only thing you can do is do your damn best to be with him as much as possible. The rest is out of your control. He will grow up and your relationship will get better. He will be much happier remembering his dad being there, even if it was rare, vs his dad not communicating with him in years.
If it works out that it's just once a year, oh well. Never stop.

You should seek legal advice from an experienced family law attorney if you want to protect your parental rights.
If you want someone to say you made the right decision giving up your parental rights and responsibilities to avoid paying child support, I can’t help you.

Nahhh frick all that. She shoulda been on birth control or took a plan b. Now that the child is here, he is just as much yours as he is hers.
Get a remote job and move to Dubai and have her stoned for dishonoring you. Problem solved.
