How much to spend for a good kids bike?

Local bike shop has a $450 Trek bike. My son is 8 and at the minimum height for the 24” model.
They also have a $300 one for my 3 year old daughter. I’m thinking about going consignment for her, but it’s one she could grow into as the training wheels come off.
Seems a bit steep to me, but I was curious if there were recommendations for other options.

Don't do training wheels...start her with a balance bike instead.

Really depends on your expectations OP. Cheap is probably fine. Make sure you get the right fit. I have 3 girls so we have bought $300 Guardian bikes and all of them have used them. Fairly certain I can sell them for what I paid for them, in great shape and like anything bike prices have inflated. Great light bikes that work and have great hand brakes.

This is coming from a guy that has a 5,000 dollar road bike and 2,000 dollar gravel bike. I don't spend a bunch of money on bicycles for my kids. They grow too fast. I just go to academy or walmart. The bike you get this year he will outgrow in 18 months anyway. The bicycles I bought for my seven and five year old last year are too small for them already.

My son, Breckenridge, doesn't ride anything but the best Specialized. We'll keep upgrading bikes every year as he grows.

I worked my way through college in a bike shop in Baton Rouge (Tuffy's World Class Bikes for LIFE!)
I have ridden and raced since college. All that is to say I know my way around a bike.
This is the correct answer:
Kids can destroy an anvil with a rubber mallet. Go buy a $100 Walmart bike for an 8 year old. BUT, take it to a real bike shop for a "tune up".
The dudes that build bikes at Walmart, especially at Christmas time, get paid by the bike. So they throw that shite together as fast as possible.
Pay a little more money for a real bike mechanic to go over it and make sure it's right and tight. Safety first.
I have ridden and raced since college. All that is to say I know my way around a bike.

My 8yo nephew did get a GT bike for his birthday this year. Silly, but I'd be lying if I said the kid in me wasn't super jealous. That was like the Ferrari of bikes when I was a kid.

How often does your son ride his current bike? Buy the expensive bike if he's riding >4 days a week. Buy the Walmart special if he occasionally rides it some weekends.
