The wife wants to stay away from the busy touristy locations so I’m trying to figure out where some quieter, less populated beaches may be on the Florida’s gulf coast (preferably panhandle if possible but willing to look at peninsula too).

Cape San Blas or St. George Island.

Went to Navarre in 2023 and it was super quiet. Not sure if that has changed since.

Sanibel / Captiva in the summer when all the snow birds are gone

St. George Island is perfect for what you are looking for.

Ditto on St. George beach with a hind base in old hotel in Apalachicola and stops in between.

St George is great if you want quiet and away from everything. Its not that great if you just don't want busy tourists.
Summers almost over OP, a lot of places along the gulf coast quiet down quite a bit in early August through the Fall.

It's Cape San Blas. There are mornings or sunsets when there aren't 4 people on the Beach. No beach chairs set up in the am like a church, no high-rises, no McDonalds. Only dog friendly beach that I know of in Florida. Close enough to Appalatchicola or Port St Joe for great food or beverages. Been renting on the cape for more than a dozen years.
