I make all my cured and smoked meats here at home. Much better quality than you can buy and I know exactly what is in them. It took awhile to learn the process but I enjoy making the sausage, tasso, bacon and even the occasional ham. I am currently trying to perfect a good boudin recipe but keep ending up with wet and mushy product. I will get it eventually but until then I eat my mistakes.

If you are going to make the trip to VP, try sausage from a few places besides Teets. I like B&S a little more than Teets, but they are all better than mass produced stuff, especially if you like heavy smoke.

Didn't realize Mandas was so frowned upon. I use it quick jambalaya dishes because the hot Mandas is HOT and adds a great flavor. I don't use it for anything else though.

They sell it at the Sam's up here. I buy it 60lbs on a regular basis and fly it up here in a suitcase.

Wisconsin has best brats. Learned this on Wisconsin LSU game trip. Johnsonville sold here is great, we did taste test at last LSU home game and everyone liked brats more than the variety of smoked sausages we grilled. We will be having brats at the deer camp this year if not grilling vines

IMO, there's really two categories:
1) Massed produced and sold in stores
2) Local smokehouse produced

For #1, I like Manda (hate all you want) but it does have a good, mesquite flavor to it and is preferred above the others (Richards, Savoies, Double-D, Conecuh). I also think Rouses' brand is better than any of these; very underrated. I can buy Manda at Fiesta here in Katy.

For #2, I like Rabideaux's. Just picked-up 6 pounds and a 1.5 lb of tasso last Lord's Day. Gumbo weather's comin'!

Undercooked your rice by about 5 minutes and add it to your pork cold.
