What's your favorite fixed blade knife for cleaning a deer? Don't mind spending little money on something good. Something that sharpens up easily

Case trapper bone color for cleaning deer. Right size, easy to sharpen, and two blades.

Fixed blade Esee 4 for everything else in the woods/camp

If it sharpens easy then it dulls fast is typically the outcome.
How much you wanting to spend?
Do you want the trouble free maint of stainless or are you willing to deal with cleaning and oiling a high carbon blade?
I have a boker arbilito that I have had for 25yrs or so it’s a low grade steel in todays world of steels 440ss but it’s been a great knife and has cleaned a ton of deer.

I have a Benchmade Steep Country and a Benchmade Saddle Mountain.

They're both very good knives.

Also have a Cutco hunting knife.

Would recommend any of those

I just use my every day pocket knife, a BM 940.

If I don't do that, I may very well use a Victorinox 6" Boner.

I use the outdoor edge replaceable blade knives. Razor sharp and all the blade profiles you need.

Been using a Morakniv Hunter knife from Sweden for 15 years . Great blade and is easy to sharpen . Not expensive and a great knife . I have 3 . I clean at least 3-5 a year .

If you are capable of carrying a sharpening steel Victorinox 12” sharpening steel wherever your going and it is only for cleaning deer, you should get a Victorinox boning knife or two or three. Or, if you want to get fancy, knives of Alaska just started making some in D2 that come with a holster KOA boning knife

The noble steels are awesome because you can skin an elk or maybe even two with them. If you are backpacking, that’s awesome.

But the soft steels, like the victorinox and even up to something like a d2, you can get hair popping sharp with a regular sharpening steel, rake it across a bone and dull the crap out of it, give it a few strokes and you’re back in business. Go in a deer processing plant and see what those guys are using.

Nobody with an s90v, m4, or cruwear or whatever fancy steel ever talks about how you need to carry a diamond hone with you to get it scary sharp after you dull it. Those steels are really awesome for a lot of things, but not what you want for skinning a deer that’s hung up under a fluorescent light. That’s just my take!

My exact first thought when I read the OP. Can't have both----easily sharpened, long lasting edge.

I've been a fan for years myself. If you want a $20 knife that does everything you want, this is it.

Get the scandi grind and your sharpening angle is all set, no guessing.
