Shocked at how many people pay to get their meat trimmed and processed by someone.

Dowlings is my go to. I dropped off a couple there 2 weeks ago and they said they were taking in over 100/day. It's crazy the amount of deer they take in a year. Mr. Dowling told me a few years back that they average around 4000/season.

I dropped one off at Bellevue opening weeked of rifle season Area 2 and got ticket #894.

I was picking it up a week or so ago and talking with a couples of guys dropping one off. The guy running the place comes out and starts talking about the weather and number of deer coming in and asked the guys dropping off what number they had.

They said "We have ticket #2246."

To which the guy replied, "That's 2246 deer we've taken in so far this season."

I know a couple years ago Bellevue stopped taking deer for a while and told us to just freeze the meat and bring it back after the season was over.

I always do it myself. I butcher my own steers when I want beef so I have good knives and grinders.

The only thing I need to do now that I'm getting a little older is get a taller table. The one I have is just short enough that when I'm standing in one place for a long time cutting and trimming, it plays hell on my back.

My family has been butchering by hand for generations. I used to leave school for 2 weeks in January to go to all of my families' farms in Western Illinois and butcher hogs and cattle for 2 weeks straight back in the mid 80s.

Grinding is always a choke point, so I use not only my big grinder, but I commandeer my wife's Kitchen Aid with grinder attachment and Doble tram that shite.

I haven't bought sausage in years. Grins and stuff everything myself.

Go to Fitz-Lee’s in independence! Those guys do a fantastic job with a great menu with lots of options. Devin’s a great dude and easy to work with

They also have a store front with a ton of other meat/food options not deer related.. bring the wife and kids and go get y’all some food! Can’t recommend them enough!!

Not anymore. I've hunted near Centreville for the last 10 years and their smoked sausage was second to none a decade ago. However, the quality started to slide a few years ago and it's mediocre at best now... and I've heard people say what they received was awful.

I was a vines fan for many years . In the last several years the quality of the smoked deer sausage isn’t what it used to be . Donnie doesn’t run it anymore and the business is growing in many different directions. They’ve expanded but IMO, it’s hurt the core of the business. Lots more choices but that’s not always a good thing.
I bought all the stuff and we make our own sausage…patty and smoked . It’s much better than what I can get at any processor around here . I get all my seasonings from Rebel.

15yrs ago it was a top five contender and one of the best in my opinion. I quit going because it was getting to be mediocre at best and the last batch that a buddy brought there against everyone telling him not to was downright horrible.

I second Benoit’s in Addis. I have had fresh sausage made with deer that I brought in and was some of the best I’ve eaten. But you better bring your checkbook with you when you go pick it up

I found them to be not too expensive. Maybe $350 for 2 does with half ground and half of it sausage. Sausage is raw. It's decent. Not my favorite. Not sure they take deer until after the holidays though.
