He may have had a very realistic dream about dying in a tornado. She may call it a tunnel, he'd call it a tornado shelter if he decided she's worth saving.

Maybe he found a gold vein?

When I was 9 or 10, I started digging a “ninja turtle” sewer in my back yard. First day or so, everyone laughed and thought it was cute. I kept digging. I could fit my whole body inside. I kept making it deeper. I started going horizontal and my parents pulled the plug on that idea and told me it would cave in and bury me alive. I had plans of a whole entire lair down there.
It filled with water and became a mosquito breeding pit until it got backfilled.
I was pretty close to becoming the 5th ninja turtle… despite not being a ninja or a turtle.

True story: my oldest brother spent like two years in high school digging a tunnel on my parents property. Arkansas dirt in the area they live is full of rock too. I think he made it like twenty-twenty five feet in the hill side. He fashioned a lean to at the entrance and enclosed it. Was pretty nice tbh. It eventually caved in

Here is a link to a site in Fresno where a single man, immigrant from Italy, spent his life digging and underground tunnel complex. He had plans to turn it into a resort with and underground drive-in ramp. Several acres, some of which the state confiscated through eminent domain to build highway 99.
It is open to the public for tours and is likely the only thing in Fresno people would visit.

I'd imagine he has his reasons. Just walking away from her and never coming back might be easier, but...

That leaves a 20% chance this is true. It has all the elements of being potentially true. I can enjoy the banter if it isn't true, so long as there aren't conflicting details in the story that make it obviously false.

Then there are the loess homes in China.
Loess is a semi consolidated rock that formed on the downwind side of rivers. There are loess deposits east of Mobile Bay, and even in some places east of the Mississippi River.
Loess is easy to excavate, but you must know to keep the walls vertical.
In China there are massive loess deposits that people have turned into home.
Perhaps the boyfriend thinks/knows he's digging in Loess?

[quote]used to be that he'd occasionally head out and do some digging on the weekends, but now he spends almost all of his free time out there. He still comes home, but he barely spends any time with me[/quote
Sounds like he is just
Digging his hole deeper
