If you must pursue this "bachelor party," the ONLY thing you should collect money ahead of time for is tickets to the concert for them and an extra $1 per person for the bachelor's ticket. Just give everyone a heads up to bring cash (including change, not just $20's) for dinner and split the check there since some people will order different things and drink way more than others. Then just take turns buying the bachelor drinks.
You are making this way too complicated and if you collect ahead of time and everyone pays the same you're probably gonna have some cheapos bitching that they didn't get their money's worth. Save yourself the headache and only collect for the concert, then go out and enjoy the night.

Denver. I go out to nice places pretty regularly and I don't spend $75/pp. Granted i don't do fancy steakhouses
I was just in Denver last week for work related training...basically a workcation. I'm pretty sure I spent 75-100 most nights just on dinner and drinking.

we won't be hitting the tourist spots. The food is better outside of them and much more affordable.

If money is that much of an issue with everyone and you're not getting strippers, why not rent a cabin for a couple nights and pile in or go camping
