Let me help you out. If they won’t modify their behavior before the interview, they definitely won’t do it after you employ them. Especially if they disagree with the direction.
This coffee thing says so much about the candidate.

Because an applicant is literally a potential employee. The whole point of the interview is to figure out if they could be a good employee. Oh, how dare this employee do something that we expect them to do on the job daily!? DISQUALIFIED!!!
It makes zero sense.
What does it say? It says to me that they drink coffee. I don’t personally drink coffee, but I don’t have a single coworker in my office who doesn’t, most do so multiple times per day. Seeing someone carrying a coffee wouldn’t even register to me as unusual enough to remember, let alone be a basis for discriminating against them. Hey, we expect everyone who comes to work here to wear clothes. You wore clothes to your interview. Therefore, you’re clearly not cut out to work here.

Why is bringing a drink worthy of behavior modification?
It's not that deep.
Hell, this is the first I've heard that it's bad form.
Most business meetings have refreshments or water anyway, do they not?

If you have to explain to a zoomer why bring a coffee to an interview is idiotic, you're wasting your time. They just don't get it. Maybe another zoomer will hire them.

We do an initial weed out virtual interview. Those not wearing a sports coat are axed immediately and I tell them why before asking the first question. True story.

Well crap, let them bring in a 3 piece combo meal too. Or McMuffin. I mean, work lets you eat too so your reasoning means they can bring in food as well.

People drink coffee in meetings. They drink coffee with clients. They drink coffee in their cubicles, on factory floors, and in the C suites. They are less likely to eat during official duties outside of scheduled breaks. So I can see that being a reasonable distinction.

How does a coffee say anything about a candidate?
Don’t middle aged and older men drink the hell out of coffee?
I cannot even begin to figure out how a coffee says anything about someone.

Do employees regularly take dumps in your office at work? Because they will regularly drop by your office holding a cup of coffee and no one will think that is the least bit unusual.

The iced coffee is not a complete deal breaker, but if I have to pick between two candidates that performed the same during the interview then I'm choosing the one who didn't bring iced coffee to it.
