I think it’s easier to argue that it’s a sign of being prepared to bring your own water/coffee than it is to show up with nothing.
Sharing a drink with someone seems like the epitome of formal. Is that not the reason it is offered so regularly?
What if your company offers prospects a coffee as you enter the interview? What’s that tell you about the candidate?

If this halfwit is judging candidates on their coffee selection, any well-qualified professional shouldn't be "interviewing" with her anyway.
