At least they don’t have to worry about security breaches. Maybe they don’t trust debit/credit cards with all the online fraud and hacking.

Nah. There's a threshold where people no longer give a shite, like the elderly people the OP mentioned. My FIL rules he and his wife’s finances with an iron fist. Uber paranoid... checks and cash only. He has an Am Ex for restaurants. Otherwise, they call us for stuff like reserving vacation properties or to buy stuff off Amazon. Like they want my wife to use her credit card for their stuff.
Once, in a nice restaurant, their CC machines went down. The manager came to the table and said, “it’s ok, we’ll just take down your information...”. He friggin lost his mind. The hell you will! I thought we were going to leave without paying for a bit.

I had to use checks when my card got hacked. However, I bring a pen and have it filled out before I get to the cashier just so guys like you don't have to wait.

I usually self checkout, but if I have to go regular checkout I won't get in a line with more than one old person, black person or combination of both and if its packed I find the line with the fewest old people and black people, I don't care if its the longest line it's guaranteed faster.

I'd personally rather take a check than a credit card. Credit card costs me 3%. I've had two checks bounce in nine years only one gave me grief getting the money.
Im actually shocked how many people still have check books. I probably get 5-6 paper checks a day.
Scan them with my phone, file them a couple of weeks then shred them.
