I grew up in Texas in the 70's and there was plenty of cajun food around southeast texas. Which makes sense with all the cajun transplants that moved there for jobs. Most the kids I grew up with had cajun last names, landry, doucette, broussard,Leblanc....

Right. That's why you can get on I-10 and drive from Lafayette to New Orleans and see accents change a half dozen times, words change meanings, and cuisine change more radically than if you drove from Utah to Ohio.

Houston is one city in the state of Texas. A city that's importing the best Louisianians and leaving the rest here.
Outside of Houston, nobody gives a shite about Louisiana. In fact, there are Louisianians that don't give a shite about Louisiana. Get up to the Northwestern corner and those frickers fancy themselves Texans.
This "Louisiana culture" our residents hang onto is pathetic. And it's pathetic because we really don't have anything else. That is until recently but Texas and her checkpoints have screamed loud and clear, they don't want our particular brand of China cough.

Weatherford, New Braunfels and other towns in that area are german. The Wurstfest in NB is much smaller but on par with Mardi Gras as far as the party goes. But the food anywhere around there is awesome. The first and original Mamacitas is in that area in Kerrville - best Mexican food I have ever had and I have had A LOT of Mexican food.
Then you have the barbecue alley that everyone is aware of.
I watch a show called Daytripper with Chet Garner. It is eye-opening how many of the little towns are there because of immigrants from all over the world who settled there. There are 2 or 3 towns that are known for their awesome churches and stained glass and food.

And Louisiana has redneck and cajun cultures. Very impressive.
