Don't assume that attaching the word cajun to any such shite in Texas equals "culture".
If true Louisiana culture ever took root in Texas, they'd run us the frick out. And the only reason they haven't yet is that right now, the better Louisianians are moving there.
There are two kinds of people that live in Louisiana. Natives who are stuck and people like me, who move here because their jobs let them live kings.

I’d venture to say that Texas and Louisiana have more culture between them than almost any other neighboring states.
And Texas has always promoted themselves as the best at everything, so co-opting Cajun culture is a no-brainer for them. Just another trophy in their case, claiming that they have everything, including the western half of Cajun Country.

. Tejas has the HUGE Mexican influence and much of Louisiana was largely influenced by the French. Mississippi and Alabama are very similar. As are Iowa and Nebraska.

Far too many people confuse food with "culture", when it's only food.
I'll bet there's alot of Italian restaurants in Texas too but nobody's saying they're trying to "co-opt" Italian culture.

Texas is very big, but i like the ethnic foods they have from other countries round the eiry. I see way more interracial relationship too

Outside of the MS gulf coast (lots of NOLA transplants migrating for years) and LA, TX and LA are close. TX just has a lot of prideful folks that don’t want to admit. So, there is some natural resistance.
