While the conclusion they reached is correct, my question is "why did they think they had the authority to vote on whether to follow scripture in the first place?" Do they believe that they can vote to change the laws of God?

Those people need to go join Jimmy Carter/Bill Clinton/Al Gore's breakaway church( the "New Baptist Covenant"). They both left the SBC for this new faction because it wasn't turning Left the way other mainstream churches were.
Religions have rules. When someone wants to change them (or violate them), its almost never about serving God, but conquering the institution for their own Earthly purposes.

I see you posted the scriptures which favor your position, but there are scriptures which challenge that position. My favorite is John 20:17-18: "Jesus said, 'Do not hold on to me, for I have not yet ascended to the Father. Go instead to my brothers and tell them, 'I am ascending to my Father and your Father, to my God and your God.' Mary Magdalene went to the disciples with the news: "I have seen the Lord!" and she told them that he had said these things to her." So, Mary Magadlene was chosen by Jesus himself to be the first human to deliver the Good News.
Here are a few more from the New Testament regarding this issue.
Galatians 3:28: "There is neither Jew nor Gentile, neither slave nor free, nor is there male and female, for you are all one in Christ Jesus."
Acts 2:17: "In the last days, God says, I will pour out my Spirit on all people. Your sons and daughters will prophesy..."
Romans 16:1-2: "I commend to you our sister Phoebe, a deacon of the church in Cenchreae. I ask you to receive her in the Lord in a way worthy of his people and to give her any help she may need from you, for she has been the benefactor of many people, including me.
Romans 16:3-4: Greet Priscilla and Aquila, my co-workers in Christ Jesus. They risked their lives for me. Not only I but all the churches of the Gentiles are grateful to them.
Romans 16:7: Greet Andronicus and Junia, my fellow Jews who have been in prison with me. They are outstanding among the apostles, and they were in Christ before me.
Romans 16:12: ...Greet my dear friend Persis, another woman who has worked very hard in the Lord.
Acts 18:26: ...When Priscilla and Aquila heard him (Apollos, a learned man with thorough knowledge of the Scriptures), they invited him to their home and explained to him the way of God more adequately.
Philippians 4:2-3: I plead with Euodia and I plead with Syntyche to be of the same mind in the Lord. Yes, and I ask you, my true companion, help these women since they have contended at my side in the cause of the gospel, along with Clement and the rest of my co-workers, whose names are in the book of life.

What the SBC voted for was specific to the office of pastor. Women can do a great many things in the church. The church could not exist without the ministry of women. But the Bible clearly teaches that the office of Pastor and a to be occupied by men. Verses that have not been mentioned are the qualifications for pastors mentioned in 1 Timothy and Titus. It says a Pastor should be the husband of one wife.The Bible assumes that church leaders will be men.

Yes, and I also understand the role of using the human brain in interpreting texts written well over 1,000 years ago and then translated through multiple different languages and then still having multiple versions of the Bible (King James, New International Version, New Revised Standard Version, Common English Bible, etc). I will take Jesus's own words and actions over those of Paul. And as I pointed out, Jesus chose to first appear to Mary Magdalane and directed her to go tell the apostles of his resurrection. So Jesus himself commissioned the first person to spread the Good News and that first person was a woman.

I cannot think of much about the Southern Baptists that I agree with, but I respect them. They know exactly what they believe and are more than happy to tell you what it is.

One of the things that sometimes make wonder is a lot of what we believe comes from Paul’s letters but not something Jesus actually said. Just a thought.
