re: Of all the musicians who died too young, whose stuff would you have most liked to see?

Jimi Hendrix, no question.

Hendrix is the easy answer here.
I'll add Amy Winehouse.

Bradley Nowell (Sublime). They were about to blow up, and he died right before they went boom. Brutal.

Not sure what qualifies as young, but Frank Zappa. He died in his early 50’s. I would love to hear his commentary on the last couple of decades, I think the music would have been fantastic.

Yup, Jim Croce came to mind immediately upon reading the question. He was just starting to hit his stride in songwriting. Some of his most famous songs were released posthumously. I believe that had he lived, he would have a song catalog comparable to anyone out there, including Lennon and McCartney.

Gram Parsons
Tommy Bolin
Both would have been big. So much musical talent.

irony was he was just about to chuck it all in and get out off the racket about the time he was killed

The crazy thing about this one is that he was retiring when his plane crashed. He wanted to dedicate his time to his wife and kid, and that record/tour was supposed to be his final one. IF he would have stuck to that, I Got a Name was most likely going to be his final record anyway.

We missed out on great hits like
You Don't Flim-Flam with Sam
Mediocre, Mediocre, Albert Roker
On the North side of Milwaukee,
Is a boring place to go, sir,
And if you head that way,
You'll probably just say "Hey."
To a man named Albert Roker,
He drives a mustard yellow Pinto,
And a Vespa scooter too,
He keeps some Doublemint gum,
In his pocket for fun,
He's wearing orthopedic shoes
Yeah He's Mediocre, Mediocre, Albert Roker,
He never really does impress,
Mediocre, Mediocre, Albert Roker,
He hardly even causes stress,
He's not too short and he's not too tall,
And he's only passable at poker,
He's not too much of much at all,
Ol' Mediocre Albert Roker
Eta: This was not to lampoon. I love Jim Croce

Jimi Hendrix
Jim Croce
Bradley Nowell
Jim Morrison
Otis Redding
I listen to a lot of dead artists wishing there was more of a catalog
