While I agree that there are many parents who coddle, reinforce, and even shape this behaviors, research does suggest specific neurobiological mechanisms.
Scans of those with AFRID show differences in brain structure and function relative to those without restricted food intake. These are mostly seen in areas areas of the brain related to executive function, sensory processing, and fear responses.

My parents had a rule-eat it without an arse whipping or eat it with an arse whipping,our choice.
As adults,me and my sisters eat almost everything.
That’s interesting about the Brussel Sprouts.As a kid they were the thing I hated the worst,they literally gagged me but I choked them down.
The hospital cafeteria where I worked had Brussels sprouts occasionally.
One day I decided I would try them,they were actually good.That was the first time in probably 30 years I had eaten them.
I had no idea about the genetically modified thing.
As adults,me and my sisters eat almost everything.

This picky eater kids thing has to be a product of modern society.
I get the feeling in the past food was scarce and kids spent way more time extremely hungry and that makes you less picky.
Kids are picky these days because they know they can be. The preferred option is always a refusal away.

My daughter is picky as frick. But she only drinks water, so it’s a fair trade off.

It's definitely interesting to dig into it.
A lot of people also seem to think picky eating is a "wealthy people thing", and I think there's merit to that globally, but I think the caveat is that it depends where you're talking about.
I imagine picky eating does not exist at all in developing countries where food is a lot more scarce.
In the U.S., poor people on SNAP often have the pickiest kids around because they only know Hot Cheetos and Coca Cola.
EDIT: Now that I think about it, I remember seeing something online about how a ton of older Asian people don't eat anything BUT Asian food. So it seems like they're adventurous eaters to us because of what they're eating, but it's actually just their version of picky eating.

Grandkids always have fruit to eat. Bananas, grapes, apples, tangerines...
They started eating small carrots, once ranch dressing was in a bowl.
They started eating celery, once peanut butter was put in the rib.
They started eating cucumbers, once hummus was added.
They make their own Raman, with choices of meat and vegetables (left-overs).
They will eat egg rolls from the Chinese restaurant with the sweet/sour sauce.
They will never turn down a bacon/sausage/egg/cheese biscuit when grandpa is around.

As someone who was diagnosed with a medical disorder when I was a kid back in the 90s, something that still impacts me today, even if marginally, and yes picky eating is one of the causes, this is a really stupid post.
