Went to one where it was a wide array of finger foods. Had mini crawfish pies that were pretty damn good.

At one wedding there were servers walking around with fried softshell crab hors d’oeuvres, which was pretty awesome.

Another wedding had Taco Bell delivered at the end of the wedding to grab as you walked out.

Different ends of the spectrum but both were cool.

A rice bar. Only been to one reception with one and my first thought was negative. However, I quickly changed my mind. They served rice in a bowl and you added either chicken and sausage gumbo, seafood gumbo, red beans or a couple of other choices that go with rice.

We had Plum St snowballs at our reception. Been to one with a mashed potato bar that was nice.

Mashed Potato Bar. Martini glassed filled Mashed potatoes and you add whatever topping you want.

Went to my wife's colleague's wedding. Protestant wedding. Quick service but only punch and bowls of M&Ms at reception. We left pretty early.

Not menu-related but still an idea.

Years back, it used to be popular to buy a bunch of disposable cameras and leave them on tables. People would take pics and leave the cameras for the wedding party to develop. If I attended a wedding with those, I’d sneak one or two into the men’s bathroom and leave them in a stall. I never heard the results from the bride and groom but someone had to have been drunk enough to take some interesting photos.

At my nephew's wedding 3 years ago they were serving raw oysters on the half shell, about a dozen different kinds of sushi in rolls and various raw fish like tuna, salmon, eel, etc.

Also had a carver cutting thin slices off a HUGE beef roast and had the small roasted potatoes and mushrooms to go with it.

Also had some stuff for the non-meat eaters to munch on.

There was also a lot of other things on the menu along with a full service bar of top shelf liquors for our drinking pleasure.

Toss in the live band and I'm sure the bride's parents forked well over $100K for that one night party.

Midnight snack is a solid addition

My friends wedding he had the finger foods and things and a dessert wall of cake slices or cake pops and other sweets

Open bar

They had these people on stilts dancing and doing stunts, it was a total surprise and I was like a kid at the circus. It was really neat.

Then a midnight breakfast option of pancakes eggs and bacon . It was so damn good and helped soak up some alcohol.

Not a lot open late night in McAllen Texas
