Butter is certainly making a huge comeback, as is beef tallow and bacon fat.

Actually, no. Rice is terrible!

Asian Americans have a high rate of diabetes due, in part, to large consumption of rice.

I just received King Arthur's newest Cookbook yesterday:

"Big Book of Bread" and it looks awesome. The book is nit only recipes, but also a detailed step-by-step on handling the dough.

It's just awesome

King Arthur Organic Bread Flour

I make “no knead bread” once a week. Don’t need a starter. Flour, salt, yeast, liquid, and anything else you want. I put fresh chopped rosemary, pinch of organic cane sugar, and a bit of IPA beer in it sometimes. Also just make it plain a lot.

Start by choosing 'uncured' meats that don't have nitrates.

Not really the case, I'll quote Co-Pilot:

Yes, uncured meat can still contain nitrates and nitrites. The term "uncured" can be a bit misleading. While it suggests that no nitrates or nitrites are added, these meats often use natural sources of these compounds, such as celery powder or juice, which contain naturally occurring nitrates. The USDA requires that these products be labeled as "uncured" and state "no nitrates or nitrites added except those naturally occurring in celery powder or juice"

So, while uncured meats might not have synthetic nitrates or nitrites, they can still contain similar levels of these compounds as cured meats. It's always good to read labels carefully if you're trying to avoid nitrates and nitrites altogether.

China does, in fact, have the highest rate of adult diabetes in the world.

Must uncured deli meats use celery extract or powder and call it uncured. Celery extract is a natural source of nitrates and does the same thing as chemical nitrates but the food manufacturers don't have to label it as "cured."
