It kind of bothers me we can't/don't keep constant recon in a storm when it gets into the GOM.

It's not, because the wind you're seeing is just from the storm its self.

You've got the idea though if you looked at an area averaged sounding (click and drag a box on the GFS on tropicaltidbits over the entire storm) you could probably pick out some wind shear.
