It just makes sense to say it as in gift. It sounds better, G stands for graphics, and did I mention it sounds better?

The creator of the Graphics Interchange Format calls it “jiff.” It was deliberately said that way to spoof the peanut butter.
And if his mama calls his Clay, I’ma call him Clay.

There is already another image file format .jiff or .jif (JPEG Image File Format) it's a raster graphic compressed using JPEG image compression. In order to avoid confusion why not say gif like gift? It makes the pronunciation unique. Instead of saying oh I meant jiff with a g or having to say i meant jiff with a j.

Steve Wilhite created the Graphics Interchange Format, or GIF, while working for Compuserve in 1987. On Tuesday, he received a Webby Award for it and delivered his five-word acceptance speech (that's all the Webbys allow) by flashing a GIF on the big screens at the Cipriani Wall Street in New York.
