When I lived in Boston, the cable guy asked me if we had alligators in the backyard. My father warned me this would happen and I thought he was full of shite until it did.

I travel, I just don’t come back from my vacation thinking the food/drink/experiences I had are what a typical person who lives there has.

All depends.
In France the adult overweight/obesity rate is 47.3%
About the same in Italy, roughly 47%.
It's 54.5% in Spain, similar in Germany at 53.5%.
In the UK it's 63.8%.
It's 60% in Ireland, specifically.
We're ahead of all of those, of course, but not by as much as you might think. We're at 73.1%.
But check this out. Now even China is over 50%, with their adult population at 50.7%.
The problem isn't just the current rates, it's that the rates are increasing everywhere...even Japan, which seems to be one of the last holdouts in low rates of overweight or obese adults.
So we may be out front now, but everyone else is trying hard to catch up.
To the OP's point, though, I have a family member who spent a couple of weeks in Ireland not too long ago and when she got back she declared that she didn't see a single fat person while she was there, even though statistically six out of every ten adults there are fat.
I also go to church with a woman who just went to London and Paris during Christmas and while she didn't make any, "I didn't see a single fat person" claims, she did talk about how they live and eat differently than Americans and how much healthier they are.
So I think the OP is valid.

No, what’s worse is the people who come back from vacation and say “The food is so much healthier, I lost weight on my vacation” not realizing their out of shape arse walked 5-10 miles per day sightseeing.

They are probably thinking about morbidly obese or at least obese people even though yes overweight is fat too. For example while nearly half of Italians are overweight, the obesity rate is like 17%. Whereas it's 43% in the US. They were probably used to seeing quite a few 300 pounders in the US while you won't see nearly that many in European nations. Overall it's such a drastic decrease in how many fat (obese) people you see, I could see people exaggerating and saying they don't see "fat" people around

I mean, they do it in the US, as well. How many Americans only think of the Quarter and Garden District in New Orleans, or the Wharf and Chinatown in San Francisco? Surprisingly, a lot.
Both of those cities are generally shitholes. Admittedly fun shitholes but they are the most romanticized in America.
