Gutsy move. A more neighborly thing would be to throw it in front of their door with a shovel. If you wanted to be nice you could leave a note telling them you are just returning their lost shite, that their dog left it in your yard.
I would definitely get photos of the dog messing up your yard for evidence in the resulting court case if they have gone to the cops already. Once I got the photos, I would call the cop sand show it to them, Tell the cops you showed it to your neighbors and they threatened to kill you and you now fear for your life.
If you can get the cops to catch the dog doing it, they will probably shoot it for you.

I see no problems with your actions here. 
I had a neighbor who repeatedly let their dog shite in my front yard several years ago. After asking him to pick up after the mutt and he failing to do so, I started shoveling the poop back into his front yard. After about a week he got the idea and kept his dog out my yard.

I use a pellet gun to handle such situations. Put a couple pellets in the dogs behind and you will never see him again.

And freeze the paint balls. Its like getting hit with a marble. Aim for dogs balls. A dog that big should have a big set of nuts hanging down and would be an easy shot.
