You do realize there is a delay in ordering and pricing at restaurants right?
I.E., even when egg prices were high at the store, the bulk orders from restaurants were already placed at lower cost.
Restaurants can’t just print new menus on a whim and eggs aren’t positioned as a “market price” item, so restaurants just took the hit for a short bit to try to ride it out.
Eventually they had place their bulk order for the future and egg prices had skyrocketed, so it’s either print all new menus or add a small fee to cover just that item without new menus.
Chains can survive due to their scale, but local mom and pop places probably had no choice, raise prices for a bit or remove eggs from the menu.
Now on the next bulk order, prices are back down to normal and they can just remove that surcharge.
Restaurants already operate on thin margins…eggs are in almost every baked good as well so the high cost probably hurt breakfast places and bakeries even more than others

When I got tired of spending $15-$20 on lunch I stopped eating out for lunch. I just bring shite from home. That’s what you do when you don’t like the prices.
