Chinese group bought an old catfish processing plant here few years back and revamped it to process Asian carp. They wanted to do 100,000 lbs a day but there were few commercial fishermen willing to work with them because they paid hardly nothing for the fish. Then a couple employees got injured in the plant and osha found several safety issues and they shut down

Louisiana & The PBRC gave Paul Prudhomme (RIP) a few million dollars 20 or so years ago to research recipes for Nutria Rats.
Notice they're still a problem?
Not even a coon-arse will eat that garbage.
The carp I bet would be ok if you could tolerate all the bones I guess.

Probably more like squirrel or rabbit.
Used to be a French place down in Soho that served a very tasty rabbit dish. Also have venison with juniper sauce. Yum..

I suspect that Nutria are as good as rabbit presuming a good chef.
There was a time when only the very poor would eat catfish. Auburn did the research way back when I was in school. Tried it way out in the countryside at a little hole in the wall test restaurant. It was good. Trick was feeding them corn pop like food that had them eating on the surface rather than ingesting mud on the bottom.

I tried lionfish recently and it's pretty good. I don't think I would like carp though.

Carp has a good flavor. Clean, white meat. My pops would put filets in his food processor, roll in corn meal & flour, and make carp puppies. Real good & tasty.

You might be surprised, carp is the most common game fish in the world. I have had it several places in Europe and it was always good. In Southern Germany, they have a dish called Christmas Carp (obviously with the standard long very descriptive German word attached to it). It is heavily breaded fried filets with lots of lemon and served with potato salad and remoulade.
I am one of those people who has a block about eating "trash" fish or "trash" mammals but my wife generally tricks me into trying them (perfectly fine with me) and I often really enjoy them.

Nope.
Was with some yahoos down in Leeville one time……they filleted some meat off a stingray and fried it up. Everybody had to get a piece. Glad I waited to see their reaction before trying mine, which I didn’t.

Nutria is greasy. Gave me the runs.
In the 60s, LDWF promoted trapping nutria for its fur, but that didn’t catch on.
