There’s damn good BBQ in Houston (Fege’s, Truth, Roegels) that doesn’t require that foolishness.

To each their own.

While I do agree with your last sentence, I do also agree that top-tier BBQ is smoked meat that is tasty enough and moist enough that one DOES NOT HAVE TO put sauce on it in order for it to be good.
There’s a place in Carlsbad, NM that all the locals (including native friends/coworkers of mine) claim is GREAT BBQ. Red Chimney. Every time I eat there, I’m also adding black pepper and dousing the brisket with BBQ sauce.
At really good places that do brisket correctly, I can do either are. In fact, I like to cut one piece and eat with no sauce, then the next piece, dip in a bit of sauce before taking a bite.
If doing that is wrong, then baby I don’t want to be right!

I’ve never had a brisket home cooked or in a restaurant that came close to what I got the one time I had TX BBQ at Terry Blacks. I was hungover as hell and did not want to be there, so I was not exactly primed to love it, but the food was light years better than anything I’d ever had in Louisiana.
Showed up at maybe 10:30-11am and waited overall 45 minutes on a Sunday during the spring. Line had beers and margaritas, so it was fine.

I got snookered into going to Franklin bbq to source stuff for a noon meal for ten people. The line was around the block and wait time estimated at 3 hours. Got back in the truck and drove to City Market in Luling because it was faster.
A Franklin side hustle is renting lawn chairs to sit in while in line
City market also has great smoked sausage links,. 25 pieces for about 55 bucks

Ok, but those people are world-class bbq pitmasters. I didn't say someone in their backyard would be able to get out as good a product as them. But that doesn't change the fact that with the mass production of things like Traegers, anybody can put out a good brisket.

Snow’s is the one in Lexington, Tx. It’s more of an event than just picking up some food. It’s a bucket list type of pilgrimage and yes, worth it for enthusiasts. I’ve never been, but I hear there is a lot of socializing.
