The answer is B. You tell him it’s your birthday and you want them there, but it’s their choice to come or not. It’s not your, or anyone else’s place to ask everyone else personal medical information.

Tell him you checked and some are not vaccinated and you will not uninvite them; but you understand if he & his wife are uncomfortable in that situation and do not attend.

Basically let him uninvite himself. Tell him you will miss having him at the party.

I would combine A and C by lying and saying that I had asked everyone and that four of the guests, who I would refuse to name, had not been vaccinated. At that point she has the option of uninviting herself.
