Coworker's wife being difficult about birthday dinner

Tomorrow is my birthday and I have a dinner/night out planned at a local brewery with a group of about 15. I invited one of my coworker friends, who is cool, and in turn his wife (no pics), who is not so cool.

Well, unsurprisingly the wife is a Biden voter (he is not) and is scared to shite of COVID. He tells me today that before they come, she wants me to survey everyone in the party on whether they've been fully vaccinated or not. I nicely told him that's a little ridiculous. Apparently she is making a huge deal out of it and is threatening to not come if people aren't vaxxed. I'm not going to reach out to 15 fricking people and tally whether they're vaxxed/partially vaxxed/unvaxxed.

What should I do baws?
A) nicely uninvite said coworker and wife
B) tell coworker I'm not going to do that and that she doesn't have to come, and risk pissing him off
C) lie and say everyone's vaccinated
D) PIIHB
E) start preparing my resume

Basically say she's being unreasonable, and they are welcome to do a smaller event sometime next week.

FWIW I have a buddy who's wife is fricking insufferable for other reasons. Everyone in the friends group hates her especially the wives who have to socialize with her. We honestly have stopped inviting him to stuff.... it sucks but we just fricking can't anymore
