I mean she's just telling you about her job, she was texting YOU and telling YOU about it. I doubt she meant any harm by it or in any way meant she didn't appreciate the things you do for her. It was probably a very nice change from what she does on a daily basis seeing her patients. Flip it around, you'd probably do the same if you were in her shoes.
I don't think there is anything wrong with voicing that it did make you feel like she doesn't appreciate the things that you do for her though, bc it is obviously something that bothers you since you say she has never done it, and if she truly never has that's wrong.

Don't know if she ever did. She did tell me that she told her sisters and her best friend how good I treated her, but apparently I am wrong for wanting to be appreciated and hear it from her myself.
