TRUE COLORS by Phil Collins originally done by Cyndi Lauper. Mellow and uplifting but I've been told all my taste is in my mouth.

Heard both versions of Head On back to back on the radio this morning. Can't decide at the moment which I liked better back in the day.
Same for the Kate Bush original version and The Futureheads version of this

U2 - Night and Day
The original is so dated, it's not really fair to compare it:
Cole Porter - Night and Day
I think you'd have to be really, really old... or Kafka... to prefer the original.
Also, as much as I like the original by Dylan, I do like Waylon Jennings' take on this:
Don't Think Twice It's Alright

No one does Folsom prison blues better than cash.
Noah - Sexy and I Know It (acoustic)
I like Garth's versions of most Chris Ledoux songs.
Kenny Chesney - El Cerrito Place, which is unfortunate, but it is better than the original.

No Jose Gonzalez mentioned?
Jose Gonzalez - Heartbeats (the Knife cover)
Jose Gonzalez - Teardrop (Massive Attack cover)
I also dig the Iron and Wine cover of Such Great Heights.

I apologize for being late to this topic and for not reviewing every post above me, but - for us "older" timers, just about every song performed by Three Dog Night was a cover that was better than the original. That band did a heckuva job in interpreting songs by others.
As an example, consider "Mama Told Me Not to Come"
