I'll take a different angle on this topic. I prefer relaxing covers and like when songs are covered acoustically.

Sara Bareilles- Yellow (Coldplay)
Nicole Cross- Dont You Worry Child (Swedish House Mafia)
Hannah Trigwell- Hallelujah (Cohen/Buckley), not necessarily better, but I love this song with a female voice
Birdy- Skinny Love (Bon Iver)
Jayesslee- Dare You To Move (Switchfoot)
The Civil Wars- Billie Jean (MJ), I know, the king of pop, but this is damn good
Jessie J- We Found Love (Calvin Harris/Rihanna)


Some time ago, I was turned on to the covers a band called Boyce Avenue does. They're well done.
We Are Young (Fun)
Fix You (Coldplay), I love all versions of this song, but I like this acoustic take
Fast Car (Tracy Chapman), not better (the original is untouchable), but a great version
Titanium (David Guetta)
A Thousand Miles (Vanessa Carlton)
Call Me Maybe (Carly Rae Jepsen), since the topic is "better than the original"
