I'm surprised some smart arse hasn't come up here saying Led Zeppelin 1 and 2.
There are tons of Grateful Dead covers, I can think of one where they killed it on Strawberry Fields.
Dead are one of those bands that play other folks music so often and so well that I used to think they were all GD songs. El Paso is a great one of theirs.

Fleetwood Mac's "Little Lies" by Ari Hest
Much more soulfull and meaningful to me.
And as much as I feel that Kate Bush is a Goddess that cannot be improved upon, The Future Head's version of "Running Up That Hill" is pretty damn good.
