November Rain is a great group of solos. It’s almost become a pariah with how much it’s played - like Stairway.
Some overplayed - but phenomenal solos -
Comfortably Numb (1st and 2nd)

Run to the Hills

Even though Ten Years After isn't in my top 10 favorite bands Alvin Lee's solo in I'm Going Home at Woodstock does it for me.

Anything by Gilmour, May, Lyncj, Vito.Bratta who is a more melodic EVH. So much to choose from. NR not even Slash's best solo.

The outro solo on Ride Like The Wind, played by Christopher Cross and absolutely buried in the mix. The man melts it down. Very, very underrated.
Steve Lukather outro solo on Running With The Night by Lionel Richie. Again, an absolutely incredible spontaneous performance that smokes.
I’m not into saying this is better than that, or ranking songs or performances, but those are two blistering solos that standout to me.

The outro of the original Layla- maybe it's more of a piano with guitar accompaniment, but it was the first one that came to mind.
