Tie between this and Duane's solos on Whipping Post. First two songs/solos I thought of when reading OP.

Would also include EVH Eruption.

November Rain is a great group of solos. It’s almost become a pariah with how much it’s played - like Stairway.

Some overplayed - but phenomenal solos -

Comfortably Numb (1st and 2nd)
Stairway
Hotel California
Another Brick in the Wall
Crazy Train
Run to the Hills
Freebird

Even though Ten Years After isn't in my top 10 favorite bands Alvin Lee's solo in I'm Going Home at Woodstock does it for me.

Anything by Gilmour, May, Lyncj, Vito.Bratta who is a more melodic EVH. So much to choose from. NR not even Slash's best solo.

One of thousands of I could post but if your asking about guitar solo

<—— what this guy does on the back half of this track is a gold standard.

The outro solo on Ride Like The Wind, played by Christopher Cross and absolutely buried in the mix. The man melts it down. Very, very underrated.

Steve Lukather outro solo on Running With The Night by Lionel Richie. Again, an absolutely incredible spontaneous performance that smokes.

I’m not into saying this is better than that, or ranking songs or performances, but those are two blistering solos that standout to me.

Dire Straits' Sultans of Swing is very impressive. Neon by John Mayer boggles my mind as well.

The outro of the original Layla- maybe it's more of a piano with guitar accompaniment, but it was the first one that came to mind.

Always liked the solos in:

Money - Pink Floyd
Running Down a Dream - Tom Petty
Green Grass and High Tides - The Outlaws (lots of them)
The Legacy - Testament
