Like others said, probably Gunsmoke. The problem is I can't confirm if I saw every episode. I have watched it way over 635 times, but no idea if i caught every episode. I'm pretty sure I watched all of Cheers, but may have missed an episode along the way.
Much easier to be sure in the streaming era, so I'll go with Married with Children (259 episodes) since I did a streaming rewatch with my son.

I've seen every episode of The Bob Newhart Show, Newhart, Cheers and Frasier. I've probably seen every episode of M*A*S*H.
Those would be the 5 I would put up (particularly as the number of episodes per season/total shows is way, way higher than modern shows like Sopranos, Breaking Bad, etc.) Those 5, even with them all being half hour series - Cheers alone is almost 150 hours, M*A*S*H and Frasier about 130 each, Newhart over 90, The Bob Newhart Show over 70.
Just those 5 shows approach 600 hours (with commercials - probably closer to 425 without).
(ETA: Just not as confident I've seen every Seinfeld episode. I know I haven't seen all of Friends. Or older shows like Bonanza or Gunsmoke.)

Because they ran reruns so long I have seen all of friends and seinfeld by now but not in order

For all the Gunsmoke replies, double impressed if you listened to all the radio episodes that predate the TV series. 9 years and 480 episodes. Very good radio program. I've heard a few episodes that were line by line remade in the TV series.

No 1 - The Big Bang Theory, 12 seasons, 279 episodes. Watched a lot of them in reruns as I started watching it live several years in.
