Have we lost our sense of humor? Are we too politically correct and woke to make a comedy?
No. Hollywood just stopped putting resources into comedy projects and upcoming comedy talent because even some of the greatest comedies in history have flopped at the box office
Much safer bet going all in on super hero movies or giving a tiny budget to a horror movie that will pay dividends

It's because Brooks told the PC nazis to frickoff that I love Blazing Saddles. The movie did not have "tons of jokes....", the whole movie was politically incorrect by today's standards. From the farting scene to the joke from the black sheriff about "sucking my arm" to telling PETA to frick off re their complaint about the scene where Mongo slugs a horse. ( it was a trained horse that would fall on command). And Brook's Young Frankenstein is # 2 on my list for the same reason. The scenes where the hunchback's hump kept changing sides drew screams from every association dealing with disabilities. etc etc

The Wrong Missy came out a few weeks ago on NF, and it's pretty hilarious.

The Way Way Back, if it is considered a comedy, it could also be a coming of age drama

21 Jump Street in 2012 and We're The Millers in 2013 were the last great comedies I could find looking through a list on wikipedia

There were a handful of great comedies in the early 2010’s, but by 2016, the genre was basically completely dead.
So, you’ve got
We Are the Millers
Scott Pilgrim vs the World
The Campaign
both Horrible Bosses movies
The Jumpstreet movies
Deadpool 1&2
Thor Ragnarok and Guardians of the Galaxy (which are both basically comedies)
This is the End
Pop Star: Never Stop Never Stopping
Palm Springs
Let’s be Cops
Death at a Funeral
Daddy’s Home
Tag
Game Night
The Other Guys
Uncle Drew
Hot Tub Time Machine
There’s just not a lot of high school/college comedies, and there’s almost zero political satire or spoofs (which is probably a good thing after the 2000’s ran that genre into the ground).
I think there’s 3 factors to the death of hollywood comedy movies:
1. Risk averse studios dumping all their resources into established tent-pole franchises
2. Smart phones and technology changes greatly reducing opportunities for comedic misunderstandings in real life, eliminating tons of classic tropes that used to prop up comedy movies.
3. PC culture, the #MeToo movement, and cancel culture achieving real influence in Hollywood between 2012 and 2016. This contributed to Hollywood being afraid of being the least bit edgy in what kinds of scripts executives would greenlight.

It depends on your tastes and generation. Nearly every generation finds things funny that other generations probably do not.
We lament less movies like Blazing Saddles, saying it would never be made today - but let's be honest, it really could only be made in that specific time frame. Much earlier and the world would never have allowed it in theaters. You think it would have played alongside The Three Stooges, or Some Like It Hot and The Shaggy Dog? Or Hello Dolly? No, absolutely not. Do you think people who wanted more movies like that saw Blazing Saddles and thought, "Thank goodness movies like this are being made?" I can assure you, a very large number of people did not.
So it is entirely based on your tastes. Some people lament the lost era of movies like Airplane!, of which the last "joke every second" movie I probably saw was in the Scary Movie franchise.
