Gangster/Mob Movies?

Yeah yeah yeah... Roast me us you must but I never really got into the genre but lately have had a hankering to watch some. I've never seen any of the Godfathers or Good Fellas or any mob/gangster movie. I did watch and enjoy the Sopranos series on HBO though.
Where should I start? Godfather(s)? Good Fellas? Any others? What's the one with Pacino saying "Say hello to my lil friend"?

I don't care for Scarface that much.

Start with Godfather I & II and then Goodfellas. Those are the best. Then you can move on to Casino and others.

Yes. You need to block out some time for the Godfather movies. They do have long run times. Goodfellas is a definite watch. I will add Casino and Donnie Brasco.

Others can include:
"Bronx Tale"
"The Sting"
"Black Mass"
"Kill The Irishman"
"Once Upon A Time In America"
That should give you a good start.

Add The Departed to the list.

Are you strictly set on Italian Mafia/gangster movies?

Some already listed and Road to Perdition.

If you liked the Sopranos watch Boardwalk Empire next. The Duece is also largely a mafia story in many aspects.
Movies:
1. Godfather trilogy (watch 3 anyway).
2. Goodfellas
3. Casino
4. The Irishman
5. Gotti (1996 HBO version)
6. Raging Bull (not entirely gangster movie but from that era).
7. Mean Streets
8. The Death Collector (its free on Youtube, the disco soundtrack killed that movie, had they used rock like in Mean Streets I think it would be a classic and Pesci is good in it).
9. Chicago Typewriter (newer movie before Frank Vincent/Phil Leotardo died, but is a fun watch).
10. Kill the Irishman
Runner Up: A Bronx Tale
ETA: Somehow I stupidly forgot Donnie Brasco, Legend (about the brothers in London that were running rackets), Once Upon a Time in America, and Miller's Crossing from my list. I never much cared for the Untouchables movie. I know a generation of people grew up watching the show and love the movie but it's much too cheesy for me.
The recent Capone movie with Tom Hardy is interesting.
Still waiting for a good biopic of Marcello and his story.

The Godfather (1 & 2) and Goodfellas are the place to start. After Goodfellas you can watch My Blue Heaven it's based on the Henry Hill story but is a comedy.

Others to consider would be:
The Untouchables
Carlito's Way
Also for comedy:
Analyze This
The Whole Nine Yards
And, if you want a cheesy, but good, black version of Scarface, check out New Jack City.

Asia makes gangster films that rival hollywood
Infernal Affairs was remade into the weaker Departed
City on Fire is one of Quentin's favorite films and essentially the prequal to Reservoir Dogs
John Woo made a series of gangster films - The Killer, Better Tomorrow 1&2, Hard Boiled
Johnnie To made The Mission and Election
Tokyo Drifter and Branded to Kill are classics that inspired every yakuza genre Asian film from the 70's on and many American filmmakers as well

Godfather I, II, and Goodfellas are at the top, but honestly, if you don't like the Godfather, there's no need to continue - the genre isn't for you.

Here's a few more.
"L.A. Confidential"
"Prizzi's Honor"
"On The Waterfront"
"Miller's Crossing"

I always said that Godfather III was a very good movie but a so-so Godfather movie.
