Damn. I just found out the Dean Martin roasts were fake.

there were "writers" for these (and all) roasts.
very few participants ever had their own "material" (Rickles was one).

All stand up comedians write and practice their material. I don't see why it would be different for a roast.

Dean Martin's comedy roast are so fake even Fred's in Tigerland wouldn't let him in.

I believe this for the celebrities who weren't actual standup comics.
You mentioned Rickles used his own material. I'd be shocked if other regulars like Foster Brooks, Ruth Buzzy, Phyllis Diller, and especially Milton Berle, would allow anyone to write their bits for them.

Milton Berle made a career out of joking how he stole material from other comedians. He 100% had writers help him.

I've watched as many of those as I can and I cry laughing. It's all real. Rickles is the best. He really said the jokes and they really made me laugh.
If you thought it was all off the cuff and there weren't writers assisting, that just makes no sense. Of course there were writers! There are writers for the Comedy Central roasts today. The actors still had to deliver the jokes. The late night shows all have writers.

In the earlier episodes (with the yellow-orange background) they were shot in front of audiences at the MGM in Vegas.
The later gray background shows were often shot with no audience, canned laughter. But for both the insults were mostly written beforehand.
Still, the Mohammed Ali and Jimmy Stewart shows were gold

I don't think too many comedian have improvisational skills.
