Well, I’d not eat and make both stops in Kansas City. Compare Joe’s in Olathe to Bryant’s on Brooklyn in KC, MO.

We drove to Joplin Missouri and spent the night. Had 3 kids and just needed to get to Omaha. This was in 2009.

Fort Smith AR has a new US Marshals museum on the bank of the Arkansas River. Nominal admission fee. Average visit about 90 minutes. Worth a visit if that interests you.
Bentonville is worth checking out. Hit the square for a meal and a visit to the free Wal Mart museum. The free Crystal Bridges Museum is great but requires a time commitment. It’s undergoing a huge addition right now, so a big area of it is closed. Still good, but will be much better in a year or so.
Hop off at Fayetteville and check out the AR campus if you’ve never been. I like to see other colleges, especially their sports facilities.
Missouri has legal recreational weed for anyone 21 and up, even nonresidents. Just walk in a shop and show valid ID. No special card needed. Pretty crazy considering how conservative MO tends to be.

When I went, we drove up the traditional way and stopped in St. Louis, which was cool. However, we decided to drive through Kansas and Oklahoma on the way back down through Dallas. We stopped for a brunch at a real midwestern diner in a place called Concordia, Kansas. Farmers were getting their grub. It was cool to see that part of the country but I have to admit, I was looking over my shoulder for Malachi and Isaac the whole time!
Definitely hit up a King Kong in the Omaha area if you can find one.

Slap's, Joe's, Q39 for more boujee bbq. Can't go wrong with any of them.
For Fayetteville Wrights is the BBQ place.
Joplin has a couple great restaurants too, one is more of the fine dining side but they have elk, steaks, etc.

Left Bossier around 5 am, it took us up through Ouachita national forest which was pretty cool. Planning on stopping in KC for a late lunch. Once you get past Joplin it’s mainly farmland.

In Kansas City, the A's are in town and the Royals are giving away an Alex Gordon bobblehead. Nice fireworks show following the game.
Some folks have advised Arthur Bryant's, but that's the last legacy BBQ joint I'd recommend. Go to Gates. Get the chopped burnt ends sandwich.
My other BBQ recommendations would be Chef J's, Q39, and Joe's. In that order.
If you have time, check out the Negro Leagues Baseball Museum or the Nelson-Atkins Art Museum (or both).

I made the drive non-stop from 5 pm to 10 am the next morning (I think, this was a long time ago). Stopped for gas and eating. I don't recommend this unless you have someone to share the drive with. I couldn't have made another 10 miles.
Wanted to add: When you get to the bottom of Missouri, you think you are almost there, but probably are only about half way. The drive through Missouri felt longer than the rest of the trip.
