Is Chicken and Sausage gumbo by itself filled with carbs?

If I hold the rice and make a gumbo using just a roux with your onions celery etc still loaded with carbs?

I’m craving one bad but trying to hold back on carbs as much as possible

It's not too bad for carbs unless you're going for zero carbs or very low carbs.

Probably 10-20 grams per bowl at the most.

For me, that's negligible. For a keto diet, it's pushing it for one serving.

Tried some rouxs with alternate flours and didn't care for them. I do 1/2 cup flour to 1/2 cup fat of choice. I make a big gumbo, little more than a gallon, about 20 servings ~5 grams per serving (8 oz).

Have also made with bone broth and 0 roux and turned out very good, 0 net carbs...

I've done roux w almond flour and used cauliflower rice. It was freaking good. Done cauliflower rice jambalaya too.

Yep.

It isn't ideal but worked. Can also add a tad of xanthan gum. Not too much or you'll end up with gelatinous nasty. Like some poor Yankee attempt at thick gumbo.

I can't remember, I may have cut the almond with carb quick. I don't keep that around any more but I think I did then.

Use a black pot, brown your meats slowly, and add a touch of kitchen bouquet and xanthan gum. You can skip roux completely.

I know it's not "traditional," but it cuts way back on the carbs and tastes good enough.


If you are doing keto, just avoid it all together. I know it sucks, but losing the weight is worth it.

Not enough for it to matter, honestly. It's not keto friendly but that diet is not healthy.

It’s pretty well-documented that keto is a sustainable diet. Is it for everyone? No, but to suggest that it is unhealthy is just flat wrong.

My standard pot of gumbo has 1-2 large onions (15g-30g carbs), 1-2 bellpeppers (6g-12g carbs), and a few stalks of celery (5g crabs). My roux is 1cup flour (90g carbs). 1lb andouille (16g carbs). No carbs in the chicken. This usually yields around a gallon or so of gumbo.

Roughly 150g of carbs for the whole pot. A one cup serving would have 9.5g carbs. If you're going for 20g net carbs a day, that's a bit much for how filling it will be. But sometimes you just need gumbo
