I had some creoles the other day.
Drizzled with olive oil. Seasoned with Italian herbs, cracked pepper and kosher salt. Topped that with grated mozzarella and Asiago cheese. Topped that with bread crumbs and fresh black pepper.
Grilled them up. They were good.

Made my very first tomato pie a month or so ago and it definitely won't be my last. I found a very simple recipe that only uses one pie crust for the bottom, a nice herb blend to top the tomatoes and the 2 cheese/mayo mix for the crust.
My wife raved about it and the only thing I'd change is the type of tomato I'll use next time. I used a couple black krim the last time and they are a very "wet" tomato and even though I salted the slices to leech some of the moisture out, it was still wet.
Next time I'll use either plum or roma tomatoes since they are a meatier tomato.

Blanch and peel, make tomato sauce for later use.
Make a lot of salsa and jar it.
This is for after you're done eating as much as you can in cucumber/tomato salad, tomato sandwiches, Caprese salad, slice and serve with salt and pepper, slice and serve with balsamic.

My grandma would take creole tomatoes and cut them into bite size pieces then thinly slice fresh cucumbers and put them together in a bowl.
In a separate bowl she'd finely mince a clove of garlic, drop a bit of salt on it and use the side of her chef's knife to drag it along the chopping board to make a paste.
Then she'd take some fresh sweet basil and julienne it, put it in the bowl with the garlic and add some olive oil and white vinegar and make her dressing to go on the tomatoes and cucumbers. Then season with salt and black pepper and let it sit in the fridge for a few hours to marinate before eating. I do this a lot in the spring when my tomatoes and cucumbers are rolling in the garden.

Tabouleh, and almost every recipe that you find..double their ratio of tomatoes..it’s much better when made wet..juicier.
Especially on day two and three when fully married.
